Physicochemical analysis of orange juice, beverage and nectar sold in Coxim-MS
Abstract
Orange is one of the most widely produced fruits in Brazil and has a high technological potential for use, especially in beverage applications. Beverage industries are investing in the diversification of their product lines, and orange juice and nectar are attractive beverage options for consumers due to their high nutrient content. The objective of the study was to analyze industrialized orange-based beverages sold in the city of Coxim-MS. The beverages were subjected to analyses of acidity, pH, soluble solids and vitamin C. The results obtained were presented by the mean and standard deviation of three replicates. The color parameters had L* ranging from 23.22 to 46.22, C* from 6.58 to 24.96 and ºhue from 101.81 to 109.25. The pH values were 2.98 to 4.13, soluble solids from 5.0 to 12.17°Brix, titratable acidity from 0.55 to 1.72g/100g of citric acid. The nectars and the beverage were acidic foods and the juices had high luminosity.
